•INGREDIENTS:
2 medium zucchinis, grated
3 medium potatoes, boiled and mashed
1 small onion, finely chopped
1-2 cloves garlic, minced
1 egg
1/4 cup breadcrumbs
1/4 cup flour (optional)
2-3 tbsp chopped parsley or cilantro
1/2 tsp turmeric (for color)
Salt and pepper to taste
Olive oil for frying
•INSTRUCTIONS:
1. Grate the zucchinis and squeeze out any excess moisture.
2. In a large bowl, combine the grated zucchini, mashed potatoes, onion, garlic, parsley, and egg.
3. Add breadcrumbs and season with turmeric, salt, and pepper. Mix everything until it forms a thick dough-like consistency. If the mixture is too wet, add flour.
4. Shape the mixture into small patties or croquette shapes.
5. Heat a little olive oil in a skillet over medium heat and fry the croquettes until golden and crispy on all sides (about 3-4 minutes per side).
6. Serve hot with a dip of your choice
(yogurt sauce, tzatziki, or a spicy mayo).
