•INGREDIENTS:
For the Dough:
2 1/4 tsp active dry yeast (1 packet)
1 1/4 cups warm water
2 tsp sugar
3 1/4 cups all-purpose flour
1/2 cup yellow cornmeal
1 tsp salt
1/4 cup unsalted butter, melted
2 tbsp olive oil (for greasing)
For the Filling:
3 cups shredded mozzarella cheese
1 lb Italian sausage, cooked (or your preferred meat filling)
1/2 cup sliced pepperoni (optional)
1 cup sautéed vegetables (like onions, mushrooms, and bell peppers)
Grated Parmesan cheese (for garnish)
For the Sauce:
2 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
1 can (28 oz) crushed tomatoes
1 tsp dried oregano
1 tsp dried basil
Salt and pepper, to taste
1/2 tsp sugar (optional, to balance acidity)
•INSTRUCTIONS:
1. Make the dough:
In a large bowl, dissolve the yeast and sugar in warm water. Let it sit for 5-10 minutes until frothy.
Add flour, cornmeal, salt, and melted butter. Mix until a dough forms.
Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
Place the dough in an oiled bowl, cover, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
2. Prepare the sauce:
Heat olive oil in a saucepan over medium heat. Add diced onions and cook until softened.
Stir in garlic and cook for another minute.
Add the crushed tomatoes, oregano, basil, salt, and pepper. Simmer for 20-25 minutes, until the sauce thickens. Set aside.
3. Preheat the oven:
Preheat your oven to 425°F (220°C). Grease a deep-dish pizza pan or cast-iron skillet with olive oil.
4. Assemble the pizza:
Once the dough has risen, roll it out to a circle larger than your pan. Press the dough into the pan, making sure to press it up the sides to create a thick crust.
Layer the bottom with shredded mozzarella cheese, followed by your cooked sausage, pepperoni, and sautéed vegetables.
Pour the prepared tomato sauce over the top, spreading it evenly.
5. Bake the pizza:
Bake the pizza for 25-30 minutes, or until the crust is golden and the sauce is bubbling.
Remove from the oven and sprinkle with grated Parmesan cheese.
