Loaded Mashed Potato Cakes

•INGREDIENTS:

2 cups cold mashed potatoes

1 cup shredded cheddar cheese

1/2 cup cooked bacon, crumbled

1/4 cup chopped green onions

1 egg, lightly beaten

1/4 cup flour

1/2 teaspoon garlic powder

Salt and pepper to taste

2 tablespoons vegetable oil

•INSTRUCTIONS:

In a large bowl, combine the mashed potatoes, shredded cheddar cheese, crumbled bacon, chopped green onions, egg, flour, garlic powder, salt, and pepper.

Mix until well combined.

Form the mixture into small patties, about 2 inches in diameter.

Heat the vegetable oil in a large skillet over medium-high heat.

Add the potato cakes to the skillet, working in batches if necessary.

Cook for 3-4 minutes on each side, or until golden brown and crispy.

Remove from the skillet and drain on paper towels.
