1 tbsp sesame oil
2 tbsp fresh ginger, minced
4 garlic cloves, minced
6 cups chicken stock
3 tbsp soy sauce
½ bunch green onions, thinly sliced
2 large carrots, julienned (about 1 cup if pre-cut)
½ tsp sea salt
1.5 lb bag of frozen dumplings (potstickers or mini potstickers)
2 cups fresh spinach, packed
1 tsp sesame seeds (optional, for garnish)
•INSTRUCTIONS:
1. Sauté the Aromatics
In a large soup pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, stirring constantly, and sauté for about 3 minutes or until they’re fragrant and golden.
2. Add the Broth and Vegetables
Pour in the chicken stock, soy sauce, green onions, carrots, and sea salt. Stir well and bring the mixture to a boil.
3. Add the Dumplings
Once the soup is boiling, carefully add the frozen dumplings. Bring the soup back to a boil and cook for about 4 minutes or until the dumplings are cooked through and tender.
4. Add the Spinach and Serve
Remove the pot from heat and stir in the fresh spinach, allowing it to wilt gently. Serve the soup in bowls and sprinkle with sesame seeds and additional green onions for garnish, if desired.
