Golden Zucchini Fritters

•INGREDIENTS:

1 large zucchini, grated

1 carrot, grated

1/2 medium onion, finely chopped

2 eggs, beaten

A few garlic cloves or garlic leaves, minced (optional)

A few green chilies, finely chopped (optional, for a spicy kick)

1 cup flour (can substitute with chickpea flour for a healthier option)

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon ground pepper

Salt to taste

1/4 teaspoon turmeric powder

1 tablespoon oil (for frying)

 

•INSTRUCTIONS:

1. In a large bowl, combine the grated zucchini, grated carrot, chopped onion, beaten eggs, minced garlic or garlic leaves, and green chilies.

2. Add flour, garlic powder, onion powder, ground pepper, salt, and turmeric powder. Mix well until a batter forms.

3. Heat a non-stick skillet over medium heat and add a small amount of oil.

4. Scoop small portions of the mixture and flatten them into fritters in the skillet.

5. Cook for 3-4 minutes on each side or until golden brown and crispy.

6. Drain on paper towels and serve warm.
