comforting soup

•INGREDIENTS:

– 1 pound of ground beef or turkey

– 1 onion, medium size, diced

– 2 carrots, cut into small pieces

– 2 celery sticks, chopped

– 3 garlic cloves, finely chopped

– 1 can of diced tomatoes (14.5 ounces), with the liquid

– 4 cups of beef or vegetable broth

– 1 cup of peas, frozen

– 1 cup of corn (fresh or frozen)

– 1 teaspoon of mixed herbs from Italy

– Add salt and pepper according to your preference.

– 1 cup of small pasta such as elbow macaroni or small shells

– Fresh parsley, finely chopped (to sprinkle on top, if desired)

 

•INSTRUCTIONS:

In a big pot, cook the ground beef on medium heat until it turns brown. Remove any extra fat, if needed.

Put the diced onion, carrots, and celery in the pot. Cook the vegetables in a pan for around 5 minutes until they start to become tender.

Add the chopped garlic and cook for one more minute until it smells good.

4. Put in the chopped tomatoes (with their liquid), broth, peas, corn, Italian seasoning, salt, and pepper. Heat the mixture until it starts to bubble gently.

5. When the water is hot but not boiling, put in the pasta and cook it until it is firm but not too soft, following the directions on the package.

6. Try the food and add more seasoning if necessary.

Serve the dish hot and add fresh parsley on top if you like.
