Yogurt Cake

• INGREDIENTS:

400g sweetened plain or flavored yogurt (1 cup + ½ cup + 2 tbsp)

4 eggs

40g cornstarch (¼ cup + 1 tbsp, sifted)

• INSTRUCTIONS:

Preheat the oven:

Preheat your oven to 180°C (350°F). Grease a 9-inch round or square cake pan and line with parchment paper.

Combine yogurt and eggs:

In a large bowl, whisk together the yogurt and eggs until smooth and fully incorporated.

Add cornstarch:

Gradually sift in the cornstarch, whisking constantly until the batter is lump-free and smooth.

Bake:

Pour the batter into the prepared pan, smoothing the top if needed. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.

Cool and serve:

Allow the cake to cool slightly in the pan before transferring to a wire rack. Serve plain or with powdered sugar, fresh fruit, or a drizzle of honey.
