Mandarin Orange Fluff Salad

• INGREDIENTS:

1 can (15 oz) mandarin oranges, drained

1 can (20 oz) crushed pineapple, drained

1 cup mini marshmallows

1 package (3.4 oz) instant vanilla pudding mix

1 cup whipped cream or Cool Whip

1/2 cup shredded coconut (optional)

1/2 cup cottage cheese (optional)

Whipped cream for garnish

 

• INSTRUCTIONS:

1. In a large bowl, combine the pudding mix and the crushed pineapple (including juice). Stir until fully mixed and the pudding starts to thicken.

2. Gently fold in the whipped cream or Cool Whip.

3. Add the mandarin oranges, marshmallows, and coconut (if using). Mix everything gently to avoid breaking the oranges.

4. Chill in the refrigerator for at least 1 hour before serving.

5. Garnish with extra mandarin slices and whipped cream.
