Ingredients:
2 cups corn (fresh or frozen, cut into bite-sized pieces)
1/4 cup mayonnaise
1 tablespoon butter (melted)
1 teaspoon chili powder or paprika
Salt and pepper to taste
Fresh parsley or cilantro, chopped
Lime or lemon wedges (optional)
Instructions:
1. Boil the corn pieces until tender, then drain and let cool slightly.
2. In a large bowl, mix the mayonnaise, melted butter, chili powder (or paprika), salt, and pepper.
3. Toss the corn pieces in the mayonnaise mixture until well-coated.
