Honey Butter Sweet Potato Cornbread

Sweet and savory cornbread made with mashed sweet potatoes and a delicious honey butter topping.

 

INGREDIENTS:

– 1 cup mashed sweet potatoes

 

– 1 cup yellow cornmeal

 

– 1 cup all-purpose flour

 

– 1 tbsp baking powder

 

– 1/4 cup honey 🍯

 

– 1/2 tsp salt

 

– 2 large eggs

 

– 1/2 cup melted butter

 

– 1 cup buttermilk

 

– For honey butter: 1/4 cup honey + 1/2 cup softened butter

 

Directions:

Preheat oven to 375°F (190°C).

 

Combine dry ingredients in one bowl.

 

In another, mix sweet potatoes, eggs, butter, and buttermilk.

 

Combine mixtures; pour into a baking dish and bake 25-30 minutes.

 

Mix honey and butter for a spread, and serve warm.
