For the Crust:
1 ½ cups graham cracker crumbs (or crushed digestive biscuits)
1/3 cup sugar
1/2 cup unsalted butter, melted
For the Filling:
1 cup light corn syrup (or maple syrup)
1 cup brown sugar, packed
4 large eggs
1 teaspoon vanilla extract
2 cups pecans, chopped
1/4 teaspoon salt
• INSTRUCTIONS:
Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
Make the Crust:
In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.
Press the mixture firmly into the bottom of the prepared baking pan to form an even layer.
Prepare the Filling:
In a large mixing bowl, whisk together the corn syrup, brown sugar, eggs, vanilla extract, and salt until smooth.
Stir in the chopped pecans.
Assemble:
Pour the filling over the crust, spreading it evenly.
Bake:
Bake in the preheated oven for 30-35 minutes, or until the filling is set and the edges are slightly golden.
Cool:
Allow the bars to cool in the pan for about 1 hour, then transfer to the refrigerator to chill for at least another hour before cutting into squares.
Serve:
Slice into bars and serve. These are delicious on their own or with a scoop of vanilla ice cream!
