•INGREDIENTS:
2 pounds beef stew meat, cut into bite-sized pieces
½ cup all-purpose flour
1 tablespoon seasoning salt
½ teaspoon black pepper
2 tablespoons olive oil
1 large onion, chopped
3-4 garlic cloves, minced
4 cups beef broth
1 cup red wine (optional)
3-4 carrots, sliced
4-5 potatoes, cubed
2 tablespoons tomato paste
1 teaspoon Worcestershire sauce
1-2 bay leaves
Fresh thyme or parsley for garnish
•INSTRUCTIONS:
1. Coat the Meat: In a large bowl, combine flour, seasoning salt, and black pepper. Toss the beef in the flour mixture until well-coated.
2. Sear the Meat: Heat olive oil in a large pot over medium-high heat. Add the beef in batches, browning each piece on all sides. Remove and set aside.
3. Cook Vegetables: In the same pot, add onions and cook until soft, about 5 minutes. Add garlic and cook for another minute.
4. Combine Ingredients: Add the beef back to the pot. Pour in beef broth and red wine (if using), then add the tomato paste, Worcestershire sauce, carrots, potatoes, and bay leaves.
5. Simmer: Cover and simmer on low for 1.5-2 hours, or until the meat and vegetables are tender. Stir occasionally.
6. Garnish and Serve: Remove bay leaves, garnish with fresh thyme or parsley, and serve hot.
