Apple Nut Oatmeal Bake

•INGREDIENTS:

2 cups oatmeal

50g mixed nuts (such as walnuts, almonds, or pecans)

2 apples, grated or finely chopped

2 tbsp sweetener (honey or maple syrup)

200g yogurt (Greek yogurt for extra creaminess)

2 eggs

1 banana, mashed

1 teaspoon baking powder

Water (as needed)

Oil (for greasing the mold)

•INSTRUCTIONS:

1. Preheat your oven to 180°C (350°F) and grease a baking dish with a bit of oil.

2. In a large bowl, combine the oatmeal, nuts, grated apples, and baking powder.

3. In a separate bowl, mix the mashed banana, yogurt, eggs, and sweetener until smooth.

4. Combine the wet ingredients with the dry ingredients, stirring until well mixed. Add a little water if the mixture is too thick.

5. Pour the batter into the prepared baking dish and smooth the top.

6. Bake for about 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

7. Let cool, then cut into squares and dust with a little cinnamon or powdered sweetener if desired.
