No-Guilt Energy Bites

INGREDIENTS:

50 g pumpkin seeds

75 g walnuts

110 g dates (pitted)

75 g dried apricots

Zest of 1 orange

20 g sesame seeds

•INSTRUCTIONS:

1. Prepare the Ingredients: Start by pitting the dates if they aren’t already, and chop both the dates and dried apricots into small pieces.

2. Blend the Mixture: In a food processor, combine the dates, dried apricots, walnuts, and pumpkin seeds. Blend until the mixture becomes a sticky and uniform dough.

3. Add Orange Zest: Once the mixture is blended, add the orange zest and mix well to infuse the citrus flavor.

4. Shape the Bites: Take the mixture and form it into logs or roll it into bite-sized balls.

5. Coat with Sesame Seeds: Roll the shaped mixture in sesame seeds until fully coated.

6. Chill and Serve: Place the bites in the fridge for about 10 minutes to firm up
