Banana Egg Cakes

•INGREDIENTS:

1 ripe banana

1 large egg

1/4 cup (25 g) oats

1/4 cup (60 ml) milk (dairy or plant-based)

1/4 teaspoon cinnamon (optional)

1/2 teaspoon vanilla extract (optional)

1/2 teaspoon baking powder

Oil or butter for frying (as needed)

•INSTRUCTIONS:

Prepare the Batter:

In a mixing bowl, mash 1 ripe banana until smooth, ensuring there are no large chunks for a smoother texture.

Crack 1 large egg into the mashed banana and mix well to combine.

Add Dry Ingredients:

Add 1/4 cup of oats to the banana-egg mixture. Stir until the oats are fully incorporated.

Pour in 1/4 cup of milk and mix well. If you prefer a thicker batter, reduce the milk slightly.

Flavor the Batter:

For added flavor, stir in 1/4 teaspoon of cinnamon and 1/2 teaspoon of vanilla extract. These are optional but highly recommended for a warm, comforting taste.

Include the Rising Agent:

Add 1/2 teaspoon of baking powder to the batter and mix until everything is well combined. This will help the cakes rise slightly and become fluffy.

Cook the Banana Egg Cakes:

Heat a non-stick skillet over medium heat and lightly grease it with oil or butter.

Pour a small ladle of the batter onto the skillet, forming small, round cakes.

Cook each side for about 2-3 minutes or until golden brown and set in the middle. Repeat until all the batter is used.
