1 zucchini
1 teaspoon salt
30 g oat flakes
100 g cheese (grated)
2 eggs
Black pepper, to taste
Spring onions (optional, chopped)
•INSTRUCTIONS:
Prepare Zucchini: Slice the zucchini and sprinkle with salt. Let it sit for 10 minutes to draw out excess moisture. Then, pat dry with a paper towel to remove as much moisture as possible.
Mix Ingredients: In a bowl, combine the zucchini, oat flakes, cheese, and eggs. Season with black pepper and mix well. If using, stir in chopped spring onions.
Bake: Transfer the mixture to a baking dish or individual ramekins. Bake in the oven at 180°C (350°F) for 20 minutes, or until golden brown and set.
Serve: Let cool slightly before serving. Enjoy warm or at room temperature.
