For the pie crust:
1 ½ cups all-purpose flour
½ cup unsalted butter (cold and cubed)
½ teaspoon salt
1 tablespoon sugar
4-5 tablespoons cold water
For the filling:
2 cups mashed sweet potatoes (about 2-3 medium sweet potatoes)
¾ cup sugar
½ cup milk
2 large eggs
1 teaspoon vanilla extract
½ teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon salt
•INSTRUCTIONS:
Make the crust:
In a bowl, combine flour, salt, and sugar.
Add the cold butter and mix until the mixture resembles coarse crumbs.
Stir in the cold water, one tablespoon at a time, until the dough comes together.
Press the dough into a disc shape, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Roll out the dough and fit it into a 9-inch pie pan. Trim the edges as necessary.
Preheat Oven:
Preheat your oven to 350°F (175°C).
Prepare the filling:
Boil or bake the sweet potatoes until tender, then mash them.
In a large bowl, mix the mashed sweet potatoes, sugar, milk, eggs, vanilla, cinnamon, nutmeg, and salt until smooth.
Assemble the pie:
Pour the filling into the prepared crust.
Bake:
Bake for about 55-60 minutes, or until the filling is set and the top is lightly browned.
Cool & Serve:
Allow the pie to cool before
serving. Enjoy it plain or with whipped cream!
