3 large potatoes, peeled and grated
1 onion, finely chopped
1 carrot, peeled and grated
1 bell pepper, finely chopped
Olive oil, for sautéing
Salt, to taste
Black pepper, to taste
Optional: grated cheese for topping
• INSTRUCTIONS:
1. Preheat Oven: Start by preheating your oven to 180°C (350°F).
2. Prepare Potatoes: Grate the potatoes and place them in cold water to prevent browning. After a few minutes, drain and press out any excess water using a clean towel or cheesecloth.
3. Sauté Vegetables: In a pan, heat a little olive oil over medium heat. Add the finely chopped onion, grated carrot, and bell pepper. Sauté until softened, about 5 minutes.
4. Mix Ingredients: In a large bowl, combine the grated potatoes, sautéed vegetables, salt, and pepper. Mix everything thoroughly.
5. Layer in a Baking Pan: Spread the mixture evenly onto a parchment-lined baking sheet or tray, making sure it’s about 1 cm thick.
6. Bake: Bake in the preheated oven for about 25-30 minutes, or until the potatoes are golden and crispy on top.
7. Optional – Add Cheese: For a cheesy version, you can sprinkle grated cheese on top during the last 5-10 minutes of baking. Return to the oven until the cheese is melted and bubbly.
8. Cut and Serve: Once baked, remove from the oven, let it cool for a few minutes, then cut into squares. Serve warm and enjoy!
