1 cup of broccoli florets (steamed or boiled)
2 large eggs
1/2 cup rolled oats
•INSTRUCTIONS:
1. Preheat Oven: Preheat your oven to 180°C (350°F) or prepare a non-stick frying pan if you’re cooking on the stovetop.
2. Prepare Broccoli: Steam or boil the broccoli florets until they are soft, then mash them with a fork or pulse in a food processor until coarsely mashed.
3. Mix Ingredients: In a large bowl, combine the mashed broccoli, eggs, and rolled oats. Season with salt and pepper if desired.
4. Form Patties: Scoop out a small portion of the mixture and form into round, flat patties with your hands. You can use a mold to get even shapes.
5. Cook:
Baking Option: Place the patties on a parchment-lined baking sheet and bake for about 15-20 minutes or until golden and firm.
Stovetop Option: Heat a bit of oil in a non-stick pan over medium heat and cook the patties on both sides for about 4-5 minutes, until lightly browned.
