oatmeal cookies with dates and walnuts

•INGREDIENTS:

1 ½ cups rolled oats

½ cup whole wheat flour (or all-purpose flour)

½ teaspoon baking soda

½ teaspoon cinnamon (optional)

¼ teaspoon salt

½ cup chopped dates

½ cup chopped walnuts

¼ cup honey or maple syrup

¼ cup melted coconut oil (or butter)

1 large egg

1 teaspoon vanilla extract

•INSTRUCTIONS:

1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. Mix Dry Ingredients: In a large bowl, mix the oats, flour, baking soda, cinnamon, and salt.

3. Add Dates and Walnuts: Stir in the chopped dates and walnuts until evenly distributed.

4. Wet Ingredients: In a separate bowl, whisk together the honey or maple syrup, melted coconut oil (or butter), egg, and vanilla extract.

5. Combine: Pour the wet ingredients into the dry ingredients and stir until everything is well combined.
