• INGREDIENTS:
For the chicken:
1 chicken fillet, finely chopped
1 tablespoon soy sauce
1 tablespoon cornstarch
1/2 teaspoon black pepper
For the stir-fry:
2 tablespoons vegetable oil
1 teaspoon sesame oil
1/2 cup chicken broth or water
1 teaspoon sugar
1 tablespoon soy sauce
1 tablespoon oyster sauce
1 tablespoon hoisin sauce (optional)
Sesame seeds (optional, for garnish)
Green onions (optional, for garnish)
Steamed or fried rice (for serving)
• INSTRUCTIONS:
1. Marinate the Chicken:
In a bowl, combine the chopped chicken with soy sauce, cornstarch, and black pepper. Let the mixture marinate for at least 10 minutes while preparing the other ingredients.
2. Prepare the Sauce:
In a small bowl, mix together the soy sauce, oyster sauce, hoisin sauce (if using), sesame oil, chicken broth, and sugar. Set aside.
3. Cook the Chicken:
Heat 1 tablespoon of vegetable oil in a large frying pan or wok over medium heat. Add the marinated chicken and stir-fry for 3-4 minutes until the chicken is lightly browned and nearly cooked through. Remove the chicken from the pan and set it aside.
4. Stir-Fry the Vegetables:
In the same pan, add another tablespoon of vegetable oil. Add minced garlic and ginger, cooking for about 30 seconds until fragrant. Add broccoli florets and sliced carrots, stirring frequently. Cook for about 4-5 minutes, or until the vegetables begin to soften.
5. Assemble and Finish Cooking:
Return the chicken to the pan with the vegetables. Pour the prepared sauce over the chicken and vegetables, stirring well to coat everything evenly. Cook for another 2-3 minutes, allowing the sauce to thicken slightly.
6. Serve:
Sprinkle with sesame seeds and green onions, if desired. Serve the stir-fry hot over steamed or fried rice.
