The Magic of Magic Custard Cake

• INGREDIENTS:

4 large eggs, separated

1 teaspoon granulated sugar

1/2 cup unsalted butter, melted and slightly cooled

1 teaspoon vanilla extract

3/4 cup flour

2 tablespoons milk, divided

Powdered sugar for dusting

• INSTRUCTIONS:

1. Preheat the oven to 160°C (325°F). Line an 8-by-8-inch baking pan with parchment paper.
2. In a large bowl, beat the egg yolks and granulated sugar until pale and creamy, about 2-3 minutes.
3. Gradually add the melted butter and vanilla extract, beating continuously until well combined.
4. Sift the flour over the egg mixture and beat until smooth.
5. Pour in the warm milk while whisking continuously until the batter is smooth and homogeneous. The batter will be quite thin, which is normal.
6. In a separate bowl, beat the egg whites until they form firm peaks.
7. Carefully fold the beaten egg whites into the batter, one-third at a time. The mixture may seem slightly lumpy, but that’s okay.

8. Coat the prepared baking pan with cooking spray and smooth the top of the batter with a spatula.

9. Bake in the preheated oven for 50-60 minutes, or until the top is golden and the cake is set with a slight wobble in the center.
10. Once baked, let the cake cool completely in the pan.
11. After cooling, dust the top with powdered sugar.
12. Carefully lift the cake out of the pan using the parchment paper, slice it into equal portions, and serve.
