• INGREDIENTS:
– 3/4 cup all-purpose flour
– 1/4 cup cocoa powder
– 1 teaspoon baking powder
– 1/4 teaspoon salt
– 3 large eggs
– 1 cup granulated sugar
– 1 teaspoon vanilla extract
– 1/4 cup milk
Peanut Butter Filling:
– 1 cup creamy peanut butter
– 1/2 cup powdered sugar
– 1/2 cup butter, softened
Topping:
– 1/2 cup crushed Reese’s Peanut Butter Cups
– 1/2 cup chocolate chips, melted
• INSTRUCTIONS:
1. Preheat oven to 350°F (175°C). Grease and line a 10×15-inch jelly roll pan.
2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
3. In another bowl, beat eggs and sugar until thick and pale. Add vanilla and milk.
4. Gently fold in dry ingredients until just combined.
5. Pour batter into prepared pan, spreading evenly. Bake for 10-12 minutes.
6. Once baked, roll the cake in a clean kitchen towel and let cool.
7. For filling, beat together peanut butter, powdered sugar, and butter until smooth.
8. Unroll the cooled cake and spread with peanut butter filling. Roll the cake back up.
9. Drizzle with melted chocolate and sprinkle with crushed Reese’s Peanut Butter Cups.
