•INGREDIENTS:
1 lb fresh spinach, washed and stems removed
2 tablespoons unsalted butter
2 cloves garlic, minced
2 tablespoons all-purpose flour
1 cup whole milk
1/2 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Pinch of nutmeg (optional)
•INSTRUCTIONS:
In a large pot or skillet, melt the butter over medium heat.
Add the minced garlic and cook for about 1 minute until fragrant.
Gradually add the fresh spinach to the pot, stirring until wilted.
Sprinkle the flour over the spinach and stir to combine, cooking for another minute.
Slowly pour in the milk and heavy cream, stirring constantly until the mixture thickens.
Reduce the heat to low and add the shredded mozzarella and grated Parmesan cheeses. Stir until the cheeses melt and the sauce becomes smooth.
Season with salt, pepper, and a pinch of nutmeg if desired, adjusting to taste.
Remove from heat and serve immediately as a side dish or over toasted bread for creamy spinach toast.
