Grandma’s Peach Cobbler Pie

•INGREDIENTS:

Fruity Filling:

6-8 peaches, sliced (5-6 cups)

1 cup granulated sugar

1/4 cup all-purpose flour

1/4 teaspoon salt

1/2 teaspoon vanilla extract

1 teaspoon lemon juice

1/2 teaspoon cinnamon (optional)

Golden Crust:

1 cup all-purpose flour

1/4 cup granulated sugar

1/4 cup brown sugar

1 teaspoon baking powder

1/2 teaspoon salt

6 tablespoons cold unsalted butter, cut into small pieces

1/4 cup hot water

Radiant Finish:

3 tablespoons granulated sugar

1/4 teaspoon cinnamon

•INSTRUCTIONS:

Prepare the Oven and Dish:

Preheat your oven to 425°F (220°C).

Lightly grease a 9×13-inch baking dish.

Create the Filling:

In a large bowl, combine sliced peaches, sugar, flour, salt, vanilla extract, lemon juice, and cinnamon if using. Stir until peaches are well coated.

Transfer the peach mixture to the prepared baking dish, spreading it out evenly.

Make the Crust:

In a separate bowl, mix together flour, granulated sugar, brown sugar, baking powder, and salt.

Cut in the butter with a pastry blender or two forks until the mixture resembles coarse crumbs.

Gradually add hot water, stirring until the dough is just combined.

Assemble and Bake:

Evenly spread the crust mixture over the peach filling.

In a small bowl, mix together the sugar and cinnamon for the finish and sprinkle it over the crust.

Bake in the preheated oven for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
