– 1 cup breadcrumbs (optional, for topping)
– 2 tablespoons olive oil or butter

1. Preheat the Oven: Preheat your oven to 350°F (175°C).
2. Prepare the Vegetables: In a skillet, heat olive oil or butter over medium heat. Add your choice of chopped vegetables and sauté until tender. Season with garlic powder, onion powder, salt, and pepper.
3. Mix the Egg Mixture: In a large bowl, whisk together the eggs, milk, salt, and pepper.
4. Combine: Add the sautéed vegetables and half of the shredded cheese into the egg mixture. Mix well.
5. Transfer to Baking Dish: Pour the mixture into a greased 9×13-inch (or similar size) baking dish.
6. Top with Cheese and Breadcrumbs: Sprinkle the remaining cheese on top. If using, add breadcrumbs for extra crunch.
7. Bake: Bake in the preheated oven for 30-40 minutes, or until the casserole is set in the center and the top is golden brown.
