For the meatloaf:
2 pounds ground beef
1 cup breadcrumbs
1/2 cup milk
1 egg
1 small onion, finely chopped
2 garlic cloves, minced
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika or Italian seasoning
1/4 cup ketchup (optional)
For the stuffing:
1 1/2 cups shredded mozzarella or cheddar cheese
For the wrap:
10-12 strips of bacon
•INSTRUCTIONS:
1. Preheat the oven:
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease a loaf pan.
2. Prepare the meatloaf mixture:
In a large bowl, combine ground beef, breadcrumbs, milk, egg, chopped onion, minced garlic, Worcestershire sauce, salt, pepper, and paprika. Mix everything well until combined.
3. Shape and stuff the meatloaf:
On a flat surface, press half of the meat mixture into a rectangular shape about 1 inch thick.
Sprinkle the shredded cheese in the center of the meatloaf, leaving the edges clear.
Cover with the remaining meat mixture and form into a loaf, sealing the edges well.
4. Wrap with bacon:
Lay the bacon strips over the top of the loaf, tucking the edges underneath. Make sure the loaf is fully covered with bacon.
5. Bake:
Transfer the loaf to the prepared baking sheet or pan and bake in the preheated oven for 50-60 minutes, until the internal temperature reaches 160°F (71°C).
If you like crispier bacon, broil for the last 5 minutes.
6. Rest and serve:
Once baked, let the meatloaf rest for 10 minutes before slicing to allow the cheese to settle.
