Ingredients:
1 medium zucchini, sliced into 1/4-inch rounds
1/2 pound mushrooms, sliced
1/2 onion, sliced
1 tablespoon olive oil
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
4 sheets aluminum foil (12×12 inches)
Directions:
1. Prepare the vegetables: Slice the zucchini, mushrooms, and onion.
2. Make the marinade: In a large bowl, combine the olive oil, thyme, salt, and black pepper. Add the vegetables to the bowl and toss to coat.
3. Create the foil packets: Divide the vegetable mixture evenly among the four sheets of aluminum foil. Fold up the edges of the foil to create a packet, making sure to seal the edges tightly.
4. Grill the packets: Preheat your grill to medium-high heat. Place the foil packets on the grill and cook for 15-20 minutes, or until the vegetables are tender.
5. Serve: Open the foil packets carefully and serve the vegetables immediately.
