This dessert is a real treasure


Ingredients for Cookies:

1 avocado, mashed

Half a cucumber, finely diced

Fresh basil, chopped to taste

1 tablespoon sour cream or natural yogurt for creaminess

Instructions:
Prepare the Dough:

In a large bowl, combine the oatmeal, ground almonds, oat flakes, cardamom, and a pinch of salt or sweetener, according to your preference.

Add the olive oil and grated ginger to the dry ingredients. Mix thoroughly.

Gradually pour in water, stirring constantly, until the dough reaches a firm but pliable consistency.

Let the dough rest for 15 minutes to allow the flavors to meld and the oats to soften.

Shape the Cookies:

After resting, you have two options to shape your cookies:

On a floured surface, roll out the dough with a rolling pin to your desired thickness, then use cookie cutters to create shapes.

Alternatively, form balls with the dough and flatten them into cookies using a form or the bottom of a glass.

Place the shaped cookies on a baking tray lined with parchment paper.

Bake the Cookies:

Preheat your oven to 180°C (356°F).

Bake the cookies for about 20 minutes, or until they are golden and firm to the touch.

Let them cool on a wire rack before filling.

Prepare the Filling:

In a bowl, combine the mashed avocado, diced cucumber, chopped basil, and sour cream or natural yogurt. Mix until smooth and creamy.

Assemble the Cookies:

Once the cookies have cooled, spread the avocado filling on one cookie and top it with another, pressing gently to adhere.
